Effect of sucrose on determination of protein

Present paper describes the effect of sucrose on determination of protein (BSA). For this purpose spectrophotometric and viscometric method were used. 0.01% BSA solution was denatured with urea at different concentration (0M, 2M, 4M, 6M) of sucrose solution. From those studies we have found that on addition of sucrose solution unfolding of BSA is hampered compared to blank one, but without sucrose solution unfolding of BSA is smooth.
